Milk powder is a natural product with high nutritional and biological value. However, its use in Russia is hampered by consumer prejudice; consumers tend to attribute poor sensory properties of milk to milk powder. Restoring a positive image of milk powder requires reliable methods for detecting it in raw milk, drinking milk, and other dairy products to prevent adulteration. This task is challenging because the composition of reconstituted milk powder is highly similar to that of pasteurized natural milk. This article describes a multimarker approach using liquid chromatography, mass spectrometry, and other cutting-edge methods. While such methods provide accurate results, they are difficult to implement routinely. Therefore, a two-stage protocol is feasible: an enzyme-linked immunosorbent assay screens out negative samples, while a multimarker method detects lactulose and furosine to confirm a positive reaction. This instrumental method addresses two pressing issues: uncovering milk adulteration and protecting reputable brands that utilize milk powder.
